The meaning of Miche comes from a large loaf of country bread, specifically sourdough that is mainly composed of whole-grain wheat, spelt, and rye. The ethos in all of our baking is the use of heritage grains and craftsmanship to produce best-in-class artisan bread and viennoiserie.

Miche Bread is made with a slow sourdough fermentation with ancient varieties of grains, mostly Spelt and Rye, rendering our bread far more easily digestible than modern industrialised breads found in the supermarkets. The flour is always freshly milled to maximise both nutritional content as well as aroma and flavour.
